{"id":1003,"date":"2026-09-02T23:20:40","date_gmt":"2026-09-03T03:20:40","guid":{"rendered":"https:\/\/mcia.ubiobio.cl\/?p=1003"},"modified":"2026-09-03T23:29:59","modified_gmt":"2026-09-04T03:29:59","slug":"%f0%9f%8e%93-nueva-doctora-en-ingenieria-de-alimentos-de-la-ubb","status":"publish","type":"post","link":"https:\/\/mcia.ubiobio.cl\/?p=1003","title":{"rendered":"\ud83c\udf93 Nueva Doctora en Ingenier\u00eda de Alimentos de la UBB"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Destacamos la exitosa defensa de Tesis Doctoral de Glenda Pe\u00f1a Portillo, estudiante del Doctorado en Ingenier\u00eda de Alimentos, quien obtuvo una calificaci\u00f3n final de 6,5, aprobando con Distinci\u00f3n M\u00e1xima.<br>Su investigaci\u00f3n, titulada \u201cSustainable Utilization of Wine Industry Residues in \u00d1uble: Extraction and Gelation-Based Encapsulation of Polyphenolic Compounds for the Development of Functional Gummies\u201d, aborda el aprovechamiento sostenible de residuos de la industria vitivin\u00edcola de \u00d1uble, mediante la extracci\u00f3n y encapsulaci\u00f3n de compuestos polifen\u00f3licos para el desarrollo de gomitas funcionales.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La tesis fue guiada por el Dr. Sergio Acu\u00f1a Nelson, con la participaci\u00f3n del Dr. Jos\u00e9 Miguel Bast\u00edas como profesor co-gu\u00eda. La comisi\u00f3n de examen de grado estuvo integrada por el Dr. Mario P\u00e9rez Won y el Dr. Jaime Ort\u00edz Viedma, profesor de la Universidad de Chile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u2728 Este logro constituye un nuevo hito en la trayectoria acad\u00e9mica de Glenda, y en la formaci\u00f3n de investigadoras e investigadores especializados que impulsen soluciones innovadoras y sostenibles desde la Ingenier\u00eda de Alimentos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00a1Felicitaciones, Dra.
